Instructions

1. Preheat oven to 350 degrees.
2. Prepare 2 - 8" round cake pans by greasing the sides and lining the bottom with parchment
3. Cream sugar and shortening, mix in flour.
4. Add milk and flavoring, mix until no dry spots (200 strokes if by hand, about 1 minute on medium using an electric mixer).
5. Add whole eggs and chopped orange peel, mix for another minute. Batter will be thin.
6. Pour into the 2 prepared 8" round cake pans and bake for 30-35 minutes, or until done.
7. Allow layers to cool in pans for 5 minutes before turning out onto cooling rack.
8. Assembly:
9. Heat marmalade in small saucepan until it liquefies.
10. Place first layer on cake plate and spread a thin layer of marmalade on top.
11. Place second layer on top, then pour rest of marmalade onto top layer. Spread around with a knife. It is okay if the marmalade runs down the sides a bit.
12. Optional: Dress it up op with a dollop of whipped cream and some orange segments.
