This creamy sweet potato pie is subtly spiced and slices beautifully!

Ingredients

  • 1 Single crust unbaked Pie shell
  • 1 c. cooked mashed sweet potatoes
  • 1⁄3 c. butter melted
  • 2 eggs beaten
  • 1⁄3 c. milk or half and half
  • ½ tsp. baking powder
  • pinch of salt
  • 1 tsp. ground nutmeg
  • 1 tsp. vanilla
  • 1 c. sugar

Instructions

  1. Pre-heat Oven to 400°F
  2. Combine sweet potatoes with all ingredients and blend well with electric mixer.
  3. Pour into pie shell.
  4. Bake in pre-heated 400°F oven about 30 minutes or until golden and puffy.
  5. Optional: Topped with sweetened whipped cream.
